Oatmeal Cinnamon Walnut Pancakes

What a MARVELOUS day!

Mother Nature dropped about four inches of snow last night, but the sun is out today and it looks absolutely beautiful out right now!

(Side note – my outdoor/wildlife photography does not hold a candle to Jim and Joan’s over at JJ Wildlife Photography.  Bruce came across their blog the other day, showed me and I am obsessed.  Their photographs are magnificent – I would seriously encourage you all to check it out.)

Last night’s snowfall called for a big breakfast of fluffy pancakes, but I wanted to find a way to sneak some grains into my go-to recipe.  So I did something that I NEVER do.

I created my own baking recipe.

I used my go-to recipe, but made a ton of adjustments and additions and got rid of some stuff so I could add oatmeal and walnuts and decrease the overall sweetness.

It involved a lot of math.

I honestly expected this to be an epic failure, so I didn’t even take as many photos as I normally do.  But I surprised myself and secured a recipe that I will definitely be using again.  Breakfast was delicious, hearty and and so filling.  Here you go!

Oatmeal Cinnamon Walnut Pancakes
1 1/4 cup Flour
1/2 cup Oatmeal
4 tsp Baking Powder
1 tsp Salt
1 tbsp Sugar
1 1/4 cup Milk
1 egg
1/2 cup Walnuts, chopped
1/4 tsp Cinnamon

Pretend there is an additional 1/4 cup of flour there.  Just pretend.

Add together your flour, oatmeal, baking powder, salt and sugar …

Then milk …

And blend everything together.

Then fold in your walnuts …

Throw in some cinnamon.

I heard somewhere that cinnamon has incredible health benefits.  Is that true?

Then pour on a hot griddle …

And flip when they are nice and golden brown!  Cook for an additional few minutes and serve ‘em up.

Stacks of pancakes are so pretty, don’t you think?

Oh my.  These were good.  Apparently my calculus courses are paying off in the form of baked goods.
I always wondered when I would need that stuff …

Word on the street is that cinnamon DOES have some excellent health benefits, but you have to eat huge quantities of it… like teaspoons.

Loved the pancakes. Needed something special in a pinch and these were perfect. I appreciate your taking the time to post it. You made me look like a superstar.
