Simply Baked Nachos

Good Mooooooooorning.  I had a 6 am furry wake up call this morning.  Actually, it was more like a wet wake up call, because a certain gray furball knocked the glass of water I had on my nightstand ON MY HEAD.

And then she ran into the kitchen as if to say, “Good you’re awake, I’d like to eat now”.

Bruce actually got up to feed her.  I told him we were rewarding bad behavior.  He told me I shouldn’t leave a glass of water on my nightstand.

Umm, hellooooooo?  It’s MY APARTMENT!  I should be able to sleep with a glass of water on my nightstand in case I get thirsty in the middle of the night.

I want to know who she thinks is paying the rent.

Anywayyyyy, I woke up HUNGRY!  I was in the mood for a big hearty bowl of oatmeal.  At the last minute, I threw in an extra treat of a topping …

Leftover Halloween Peanut Butter M&Ms!  Halloween candy was 30% off at Target last night and I couldn’t help but grab a bag.  They made such a delicious topping!  Melted in my mouth.  Yummmm.  I also sprinkled some brown sugar and walnuts on it.

Onto to my latest moving issue.  For moving (and – ugh – roach) related reasons, Bruce and I decided to get rid of our microwave (we didn’t throw it away, we donated it!).  I actually have been wanting to ween off of using a microwave eventually, but going cold turkey has presented all sorts of issues that have been fun to solve.

Last night I was in the mood for a snack of nachos – but without a microwave, how do you melt cheese? It was so simple.

Simply Baked Nachos
Restaurant Style Tortilla Chips
Shredded Mexican-Blend Cheese
1 Roma Tomato
1/4 Sweet Onion

This literally takes TEN MINUTES.

Line a small baking sheet with tortilla chips and cover with cheese.
Dice the tomato and onion, sprinkle on top.
Bake in a toaster oven (best invention ever) at 350 degrees for five minutes.  The high temperature melts the cheese and toasts the chips quickly without overcooking the vegetables.

Then devour.

And spoil your dinner.

I got candy on sale at Target too. It's hiding in my freezer :)

Nachos are the best! Those look really yummy. My mom used to make them for me when I was little – she'd just throw some cheese on top of the chips and broil them for a few minutes. I thought it was the coolest thing ever (but what 8-year-old wouldn't? :) ).

I laugh because I'm beginning to think that you really aren't the master of your apartment. Can't find room on your bed. You shouldn't leave water on your nightstand. I think they know something you don't! :o )

Girl after my own heart – adding M & Ms to oatmeal, I love it! By the way, how do you format your photos? I love the layout with the boxes. Is it something you had to download?
